At the beginning of the year I said that I was going to start writing out our meals for the week and buying all the ingredients at once. I went to the store Wednesday (walmart) for the week and spent $130- and I have written out all of our meals- breakfast, lunch and dinner for the following 7 days. I boughtthis in January to help me plan for the week and it has been fabulous. I have never claimed to be a cook of any kind but I am going to continue to try and get better!
Wednesday’s meal:
Roast, Potatoes and Carrots in the crockpot
Peas
Rolls with butter and honey
Easy Enough! And my family loved it.
Thursday’s meal:
White Chicken Enchiladas:
Chicken enchiladas with sour cream sauce
10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chillies
(We don’t like anything hot so I substituted the green chillies with black beans)
1. Preheat oven to 350 degrees. Grease a 9×13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies (I didnt add the chillies). Do not bring to boil, you don’t want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese. I added the black beans with the cheese!
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

* also, just this week I decided to try out some new recipes that I found on pinterest (very very easy ones)- I started this board called “dinner” here if you want a few new simple ideas!

You're going to laugh out loud at this one, because I did. I was reading and then you said you shopped for your groceries at walmart. I was like, "whaaa? Casey shops at wal mart? but she's famous…famous people cant shop in public places like that!" half way through this thought it dawned on me that you're just a normal person who I feel is amazing, and who has a ton of people who love you so it almost makes you seem famous I guess. ba ha ha totally made myself laugh. this was seriously great. awesome.
Those all look yummy and super easy! Why not try adding some more ethnic food too? Indian can be good and it doesn't have to be spicy, or Chinese or Greek. And it's fun too. 🙂
I plan to plan (;-)) my meals everytime again, but somehow I never push through. Which is silly, because the few weeks that I did plan my meals, it turned out that that way I get the most creative and I found some amazing new recipes. After my surgery I am going to start again and then really stick to it. Thanks for the inspiration, Casey!
I'm glad you posted this, I need to plan more. Lately I have just been buying things here and there and there is no rhyme or reason and I hate it when I don't use everything. I hope you are having a great weekend 🙂

Lovely! If you like chicken enchiladas you would love to pasta version. I made it myself a couple weeks ago and my kids downed it,even with the veggies in it.

i tried meal planning and ended up spending more than i normally would! making a roast in the crock pot is a weekly thing here at our home.. its just so easy 🙂
