I feel like this salad is my ode to summer. My last hurrah for all things fresh and light and citrusy. With a cherry on top. ;) Because next thing you know it'll be September, school will be well underway, and we'll be breaking out the plaids and flannels and the soups and the pumpkins. I've got to admit. For the first time ever, I won't be ready in the slightest. Summer went way too fast this year and I want to cling to her with all I've got. Maybe head to the beach with the kids and defy autumn to hang on just a couple of more weeks. Who's with me?!
I'm already beginning to see signs of the changes in grocery stores. The price of fresh strawberries, corn, blueberries, and peaches are beginning to go up, and cranberries will soon get stocked in their place. We'll start to get back in my comfort zone of one-bowl soups and chilies and I'll begin writing about apples and butternut squash (my favorite!), but this summer has been good. It has stretched me in more ways than one and I've honestly loved experimenting in the kitchen with ingredients like goat cheese and essential oils. So here's to a summer well spent. I hope you've filled it full with fresh, good-for-you food and the people you love. Now here's one last summery salad....

“We are starting our journey with Essential Oils and have done our own research on the purity of oils. I am confident in using oils in our recipes because we only use Young Living. They are beyond organic and never use pesticides, herbicides or any harmful chemicals. Their soil has never been exposed to them as well. I don’t suggest ever using any other oil for ingestion because I don’t know of their purity. "
