VIRGIN STRAWBERRY LEMONADE MIMOSAS.



Mary Beth Johnson is a wife and mum to four schooners, as she’s dubbed her children. On a normal afternoon, you would find her in moccasins, skinny jeans and a comfortable tee, camera in hand. Recently moving to the suburbs of Atlanta, Mary Beth spends her days homeschooling, sneaking away to the bookstore, trying to act the part of a southerner, and sifting through recipes in The Vegetarian Times. Food is her love language.


We’ve had a lot of weekend trips and guests coming to stay with us in the last few weeks. I love that our door has been swinging both ways this summer and we are traveling and visiting with the people we love. Since I would much rather cook than clean, I have been trying out new recipes on our guests and tweaking simple dishes after their feedback. It is truly my joy to use our rental kitchen as a place to serve others and make memories as we’re preparing the food together, sharing tips on making the grocery budget stretch further or how to zest a lemon without cutting your finger. These are sweet times! 
//VIRGIN STRAWBERRY LEMONADE MIMOSAS
I made these drinks non-alcoholic and served with brunch. 
I was flexible with the ratios, but I did my best to jot down the approximate measurements for the sake of this recipe. Add more or less as you need and make it your own. These are citrusy and summery and would be great served at a shower or an outdoor party!



1 bottle of Simply Lemonade (or your favorite lemonade recipe)
3 cups fresh strawberries
4 cups club soda
A few drops YoungLiving Lemon Essential Oil
1 lemon, for garnishing
fresh mint, for garnishing



Instructions:
Begin by washing and removing the stems from all of the strawberries. Once you have finished, puree them in a blender. Combine the lemonade, essential oil, and the puree in a large pitcher and refrigerate until ready to serve. Just before serving, add club soda and pour over ice. Garnish glasses with slices of lemon and sprigs of mint leaves and serve with brunch!
